01The shelf the brand is known for
Double-breasted coats that do up with eight or ten pearl buttons or with knot buttons, in full, 3/4 and 1/2 sleeve, cut for men and for women, in white and in black, from XS to 5XL with tall runs on the pearl-button line.

Settle the closure first, because everything else on this shelf is close to identical underneath it. Eight pearl buttons is the standard double-breasted front; ten sets them closer with a little more overlap across the chest; knot buttons are the ones a kitchen keeps spares of in a drawer, because they are the first thing a commercial dryer takes off. The buttons are made not to yellow under industrial laundry chemistry, which is what keeps a white coat from turning cream after a season. Then choose the sleeve by the station rather than the season: full sleeve at a flat top, 3/4 at a sink or a pass, 1/2 in a kitchen with no air handling. The cloth under all of it is a 65/35 poly-cotton twill, pre-shrunk with a stain-release finish, with a stand-up collar, vented cuffs and a chest pocket, and on the pearl-button coats a narrow thermometer pocket on the left sleeve. Between two letters, take the larger: a double-breasted front crosses the chest twice.

Prices are the figures from our last update; the Chef Designs eye updates them on a schedule, and the figure at the till is the one that counts.
03Before you order
How the front does up, what the sleeve length is for, and how a white coat stays white through a commercial wash.
Ten sets the buttons closer together and gives a little more overlap across the chest, which reads as the dressier coat and is the one to pick if the pass is visible from the dining room. Eight is the standard front and the one most kitchens reorder. The cloth, the collar and the pockets under them are the same.
Knot buttons are tied rather than moulded, and a commercial dryer eventually works one loose; that is the trade-off for a button that does not crack under a press. Kitchens that buy the knot-button coat keep a card of spares in the office drawer, and the coat is otherwise the same double-breasted cut as the pearl-button one.
A thermometer. It sits on the left sleeve on the pearl-button coats, narrow and deep enough that a probe rides upright and does not roll out when you reach into an oven. The chest pocket takes the pen.
Every closure, every run
Every coat, shirt, pant, apron and hat in the Chef Designs lineup sits behind this button, with the price from our last update against each one.
