01For a room with no air handling
The two coats cut with the sleeve out of the way: a 3/4 sleeve that clears a sink, and a 1/2 sleeve for a kitchen where the temperature decides everything.
Colourways on this page: White.
Every argument about sleeve length in a kitchen is really an argument about two risks. A full sleeve is a barrier between a forearm and the edge of an oven shelf; a short sleeve is cooler and does not trail into a sink or a sauce. The 3/4 sleeve coat is where most kitchens settle: it ends below the elbow, well clear of a pot and a tap, and still covers the part of the arm that meets a hot rail. It is cut with a two-piece sleeve, which is why it hangs from the shoulder instead of bunching at the elbow.
The 1/2 sleeve coat goes further and is bought for one reason: a room with no air handling in July. It keeps everything else the coat has -- the eight pearl buttons, the double-breasted front, the stain-release finish on a pre-shrunk 65/35 twill, the chest pocket -- and gives up the forearm. Both coats are sized S to 4XL, and both are ordered by kitchens that already own the full-sleeve version and want a second rack for summer rather than a replacement.

02About these pieces
For a room with no air handling
It is, and it is the more useful difference of the two: the sleeve ends below the elbow, so the forearm is free at a sink and at a low pass, while the part of the arm that meets a hot shelf is still covered. The cloth is the same, so the cooling comes from the cut alone.
Only if you have decided the heat is worse than the burn risk. A 1/2 sleeve leaves the forearm bare, which is the trade-off; kitchens that order it usually run it as a summer rack alongside their full-sleeve coats rather than replacing them.
The chest pocket is there on both. The narrow thermometer pocket on the left sleeve belongs to the full-sleeve pearl-button coats, which is where there is sleeve to put it in.
