A cook shirt is the garment for everyone who does not need a coat: prep, dish, counter, delivery. The difference that matters is the front. Five grippers pull apart in one movement and go back together without looking, which is why a dish porter with wet hands prefers them; five buttons hold flatter under an apron bib and do not catch on a rack. The bottom is squared rather than curved on the button-front shirt, so it looks right tucked in or left out, and both shirts are cut easy enough to go over a t-shirt in a cold store. The cloth is the same 65/35 poly-cotton the coats are cut from, and the long cook shirt is the one to buy when a shirt keeps riding up out of an apron waist: it is cut longer in the body and comes in a tall run as well.
